Antioxidant Salad with Mānuka Honey and Herb Dressing
Prep Time , Serves 2-6.
Ingredients
- 120g baby spinach leaves
- Thinly sliced red onion as desired
- 100g goat cheese, sliced
- 1 cup blueberries
- 6-8 strawberries, sliced
- 8-10 blackberries
- 1/2 cup raw walnuts
Herb Dressing
- 60ml good quality Olive Oil
- 1 tablespoon Taylor Pass UMF5+ Mānuka Honey
- Juice of 1 lemon
- 1 garlic clove, finely diced
- Large handful fresh basil
- Handful fresh mint
Instructions
- Place all the dressing ingredients into a small jug and use a hand blender to blitz until smooth. Taste and season well.
- Spread the baby spinach out on a large platter. Top with the red onion and goat cheese. Add the blueberries, strawberries and blackberries. Add the walnuts and drizzle generously with the herb dressing.
