Gluten and Grain Free Banana Bread Waffles
Makes 6.
Ingredients
- 2 medium ripe bananas, peeled mashed
- 1 teaspoon vanilla extract
- 4 eggs, lightly whisked
- 1/2 cup milk (dairy or non-dairy)
- ½ teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- ¼ teaspoon mixed spice
- 2 cups almond meal
- 1 cup tapioca flour
- 1 rounded teaspoon baking powder
- 3 tablespoons Taylor Pass Honey
Honey and Vanilla Mascarpone
- 300g mascarpone
- 2 tablespoons Taylor Pass honey
- 1 teaspoon vanilla extract
To serve:
- Berries, sliced banana, additional honey for drizzling
Instructions
- Whisk together the mashed banana, vanilla, eggs, milk and spices.
- Add the remaining ingredients and whisk until smooth.
- Heat and lightly grease the waffle maker with butter or coconut oil.
- Pour a 1/3 – 1/2 cup of batter (this will depend on the size of your waffle maker) into the machine and spread out a little. Cook for until nicely browned.
- Place in a warm oven to store while the remaining waffles are cooked.
- Mix together the mascarpone, vanilla and honey until smooth.
- Serve waffles with a big dollop of honey mascarpone, a scattering of fresh fruit and additional honey drizzled as desired.
