Honey and Chilli Roasted Baby Carrots with Feta

Prep Time , Cook Time , Serves 4.

Ingredients

  • 1 1/2 tablespoons Taylor Pass Beech Honeydew Honey
  • Generous pinch dried chilli flakes
  • ½ teaspoon fennel seeds
  • ½ teaspoon salt
  • Generous grind cracked black pepper
  • ¼ cup olive oil
  • 2 bunches baby carrots, washed and leaves trimmed
  • 100g feta
  • Toasted pumpkin seeds and roughly chopped parsley to garnish

Instructions

  1. Preheat oven to 220 degrees.
  2. Whisk together the honey, chilli flakes, fennel seeds, salt, black pepper and olive oil.
  3. Halve the baby carrots and place on an oven-proof tray. Pour over the marinade and toss well to evenly coat.
  4. Roast for 20-25 minutes until browned at the tips.
  5. Place on your serving dish. Crumble feta over the top. Drizzle with a little more honey as desired. Garnish with pumpkin seeds and parsley. Enjoy.
