Olive Oil Honey Cake
Ingredients:
- 250 grams of sugar
- 5 eggs
- 150 ml olive oil
- 100 ml Taylor Pass honey
- 250 grams flour
- 1 teaspoon cinnamon
- 1 teaspoon fennel
- Butter (to grease)
- 1 cup walnuts
- 1/2 teaspoon baking powder
Method:
- Preheat oven to 180°C
- Blend sugar with eggs and stir well.
- Add a drizzle of olive oil and honey, stirring constantly, until ingredients are well mixed.
- Gradually add flour, cinnamon, fennel, and baking powder.
- Mix well.
- Fold in walnuts.
- Place batter into baking pan. Bake for 20-26 minutes or until a toothpick comes out clean. Cool.
