Taylor Pass Honey and Blueberry GF Bread and Butter Pudding
Prep Time , Cook Time , Serves 4-6.
Ingredients
- 9 pieces of Lucy’s “The White One” bread (about 340g)
- Butter as needed to spread
- 2 cups milk
- 2 eggs
- 1 ½ teaspoon vanilla essence
- ¼ cup Taylor Pass Creamed Clover Honey
- 1 cup frozen blueberries
- Extra honey for drizzling
- Fresh cream for serving
Instructions
- Spread the bread generously with butter on both sides. Cut into quarters.
- Whisk together the milk, eggs and vanilla essence. Add the honey and whisk well.
- Layer the bread in a greased oven-proof dish. Sprinkle some frozen blueberries between each layer.
- Pour the custard mixture over the bread and berries.
- Press the bread down gently to ensure it’s all in the liquid. Leave to soak for 20 minutes.
- Place in the oven and bake for 25-30 minutes until golden.
- Drizzle with extra honey on top while still warm.
- Serve with cream if desired.
